5 peeled carrots (two for the dip)
3 cucumbers (one for the dip)
1 bunch radishes
6-9 cloves crushed garlic
16 ounces cream cheese
Finely chop 2 carrots and a bunch of radishes.
No seeds, no gas.
( But, my chickens love them!)
Chop the others into bite sized pieces and place on a serving plate. While you are at it chop the remaining carrots, also in bite sized pieces. You are half done!
Process grated *cucumber, crushed garlic, and cream cheese. My processor is very small, so I do this in two batches. ( I reserved a couple of tablespoons of the carrot/radish mixture for my topping.) Blend the cream cheese mixture with the finely chopped veggies. Sprinkle top with your reserved garnish.
*Tip: don't add all the shredded cucumber at once. Sometimes it is very watery and will thin the dip too much.
I served my dip with bite-sized veggies, but it is just as good with chips or crackers.
