Gather these supplies (above) and line a small baking dish with foil.
Put a dollop (1/2 cup mayo) on one side of a dinner plate, with a combination of 1/4 cup Parmesan cheese, mixed with 1/4 cup bread crumbs on the other. Add S&P and some herbs if you like.
Roll "fingers" in mayo, then in bread crumbs and set onto a foil-lined baking dish. Refrigerate until ready to pop into an oven, preheated to 425 degrees. Bake about 20 minutes.
*Tip: I keep my bread crumbs in the freezer.
**Tip: An easy way to make breadcrumbs is to freeze bits of bread before it turns. Then, quickly blenderize to crumble and immediately return to the freezer. We don't eat much bread, so I always keep Panko on hand.
Chicken fingers are good served with rice mixed with quinoa, and steamed veggies topped with a tablespoon or so of shredded cheese. Leftovers are wonderful chopped on top of a salad.
